Homemade Almond Milk


Lately, this blog should be called "Swiss Miss in the Office"... I'm sorry for not posting regularly, but I'm hardly spending any time in my beloved kitchen. Well, sometimes we all have to work double shifts and this is fine as long as we eat properly!! Starting with a hearty breakfast to get the much needed energy for these long days. I love almond milk in all of in my breakfasts and I always bought it. What a mistake!! It's unbelievable easy to make and it taste's a million times better! If you love almond milk, please try to make it at home, you won't go back I promise!! Let's go:

Vegan Pea Soup


Although we haven't had a strong winter, I'm done with it. I'm done with the grey afternoons, the foggy evenings and the cold fingers in the mornings when I ride my bike. I'm tired of wearing the same coats, gloves and boots every day. Yes, hot chocolates are still great and yes, wintery soups and stews are awesome but; I definitely need a change! Nature slowly starts to show the first spring signs, but I had to bring a little bit of spring into my kitchen. Therefore I made a springish pea soup! It's done in no time, filling, healthy and very delicious! Smooth, sweet and yummy! Here we go:

Vegan Pancakes with Apple Pear Compote


When I studied, I used to eat breakfast food all day long. Cereal for lunch? Yes please! Pancakes for dinner? Sure!! Growing up and moving in with a man changed certain things. My eating habits changed (thank God!) but sometimes, when my boyfriend is out with his friends, I go back to my breakfast-eating-all-day-long days. Yes. I eat oatmeal, cereals or pancakes while I watch girlie TV shows. And I love it. Last night I made fluffy vegan pancakes, drizzled them with maple syrup and served them to myself with some apple pear compote. Delicious! Wanna join me? Let's go then:

Black Quinoa Pasta with Chickpeas and Tomatoes



I'm not the biggest shopping queen on earth when it comes to shoes or dresses. Of course I love a good shopping tour but after a certain time I get bored and all I wanna do is grab a cup of tea and a whatever-scone :) But, I can never get enough of food shopping! I'm totally addicted to markets, food health stores and big supermarkets where I can wander through the shelves and discover new food... Last time I hit my food health store I saw something I've never seen before: Black quinoa pasta! High in protein, gluten free and absolutely new to me. Of course I had to buy it immediately. I served them with some oven roasted chickpeas and cherry tomatoes. A quick, unusual, delicious and super high in protein vegan meal! Let's go:

Vegan Cinnamon Raisin Buns

































In my last post I wrote about comfort food. I talked about soft and pillowy homemade gnocchi. Forgive me, I'm still somehow in the comfort food zone. Let's blame January. This time I'm talking about soft and pillowy cinnamon raisin buns.. Alas these are good!!! I tried to make them as healthy as possible (no white sugar, no wheat flour) and made them vegan as well... These babies are light and fluffy and not overly too sweet. Let's go:

Vegan Homemade Gnocchi

 






















Let's talk about comfort food. Shall we? To me, comfort food isn't only necessary during winter season, nooooo way. I need comfort food all year long. Period. Comfort food includes carbs. Always. I always wanted to make gnocchi by my own. They simply represent perfect comfort food to me. Pillowy soft gnocchi drizzled with a bit of olive oil and sprinkled with sea salt equals comfort food heaven in my world. Or covered with a homemade marinara sauce? Or tossed together with some pesto sauce? Either way, these little gems are just too good. The need a little bit of time but they are definitely worth it! Wanna came with me to comfort food heaven? Beetroot, Apple and Fennel Soup

Hello everyone! I hope you had a great Christmas with your families and loved ones! After the feasting over the last days, I was in the mood for a simple and clean vegetable soup. To get some inspiration, I browsed through Gwyneth Paltrow's It's all good and the moment I saw her beetroot soup my decision was taken! The deep red color immediately caught my attention. If you like beetroot, you will love this soup! The earthy taste of the beetroots is lovely combined with the sweetness of the fennel and the apples. It's easy to prepare, healthy, pretty and totally delicious! Here we go:

Cinnamon Coconut Banana Bread



Making banana bread on a cold sunday morning was the perfect thing to do today. Especially when you can enjoy it with a big cup of coffee watching your favorite TV shows you couldn't watch during a busy week. This cinnamony and coconutty banana bread filled my apartment the whole day with an irresistible christmasy smell and I couldn't leave my cosy little nest all day long. But honestly,  silly TV shows and freshly baked banana bread is all that this girl needs sometimes to be happy and satisfied for a (a few days) cold sunday :) Here we go:

Cauliflower Salad with Pomegranate Seeds and Cilantro

 

When I first tried Sushi, I didn't like it. In fact I thought that it was one of the most disgusting things I've eaten so far. Drinking coffee a few decades years ago? Same story. I couldn't believe how people can actually like this plonk. The first bite of fettuccini with truffle oil? Ugh. "What's all about this ugly tasting mushroom?" I thought. My point here? It's the same with cauliflower and me. First, like all the above mentioned foods, I hated it (and you know how much I adore vegetables!). And now, I couldn't imagine my kitchen without it! For this recipe, I roasted the cauliflower in the oven and turned it into a beautiful salad with cilantro and pomegranate seeds (and yes, I had leftovers from this post). It's a lovely starter and I think the pomegranate seeds make it a little bit festive. Here we go:
