I'm sorry lovelies for my blog-absence. There was absolutely no time for blogging or cooking last week. Whilst working full time, trying to get my housekeeping done, meeting friends, exercising, doing grocery shopping I found no time for myself in the kitchen. When I checked my schedule for next week, I saw that next week is going to be stressful too. I know many of you work full time too AND have kids AND have wonderful blogs, so I'm sure you know those week where you need extra strength to get all your things done. Well, I have something for you: Raw vegan cocoa truffles!
Believe me, these beauties are super tasty and at the same time so good for you! They contain raw cocoa, almonds, cashews, coconut oil, dates and a tiny bit of coarse sea salt. I promise you, they will give you immediately the power you need without any guilty conscience :) Here we go:
Ingredients (inspired by Oh, Ladycakes)
- 1 cup almonds
- 1 cup cashews
- 1/4 cup cocoa powder plus 1 tbsp
- 15 mejool dates (soaked for 15 minutes)
- 1/2 tsp coarse sea salt
- 6 tbsp almond milk
- 1 tbsp coconut oil
Place all the ingredients in your food processor and mix until you reach a smooth consistency. Transfer mixture into a small bowl and put the bowl in your fridge. Allow to cool for 25-3o minutes. By using your hand, roll the mixture into small ping pong ball sized balls and coat with raw cocoa. Enjoy!!
