Besides my boyfriend, I'm in serious love with a) Jamie Oliver and b) Gwyneth Paltrow. I don't have to say anything about Jamies brilliancy when it comes to food. Whenever I make a recipe of him, it turns out perfectly. I adore his approach to food. Now to Gwyneth: I loved her (still do) as an actress but ever since I discovered that she is amazing when it comes to food, I'm head over heels into her. I made her perfect blueberry muffins and I bought her second book which is full of amazing recipes. Yesterday, I made her "flourless anything crumble". No butter, no white sugar, vegan and completely awesome! We had guest over and everybody loved it! I tweaked the recipe a little bit and added some coconut flakes.
Here's what you need for 4 people (adapted from it's all good)
- 2 apples (peeled, cored and cut into small pieces)
- 5 small plums (cored and halved)
- 1 cup raspberries (frozen works perfectly)
- 1/2 cup almonds
- juice of half a lemon
- 5 tbsp maple syrup
- 3 tbsp olive oil
- 1/2 cup corn flakes
- 1/2 cup coconut flakes
- pinch of salt
- dash of cinnamon
Preheat the oven to 400 degrees Fahrenheit (or 200 degrees Celsius). Place the fruit in a shallow baking dish with the lemon juice and with two tbsp maple syrup. In a food processor, blend the almonds, the corn flakes and the coconut flakes just enough to mix all the ingredients. Add the cinnamon, the olive oil and the maple syrup. Crumble the mixture over the fruit and bake for 25 minutes. Serve alone or with some ice cream! Delicious...
